There are contemporary restaurants in Lisbon that I’d warmly recommend to anyone who is new to the city, and then there are spots that I, perhaps selfishly, want to keep to myself so only “true foodies” discover it.
Of course, that’s a losing strategy, because anybody who loves a restaurant should do anything in their power to bring customers to it, and VDB Bistronomie is one of those snugly hidden hole-in-the-walls that you’d likely miss even if you’d somehow find yourself in its peculiar location.
Owner Clement Van den Bergh and chef Rafael Amsler don’t use flashy lights or prime real estate to attract their crowd: they let their food speak for itself. Trust me, one bite into their octopus burger, their pork pressa, and their crispy rice will have you join the clandestine word-of-mouth gang that makes VDB a gastronomical paradise.
