Chef Xavi, who has done time at the Michelin-starred Belcanto, and the now-shuttered Chez Chouette, has finally found his perfect match with Polemico; a kitchen that’s not only run by him, but effortlessly captures his easygoing (but always hardworking) joie de vivre.
Everyone working this effortlessly cool restaurant is cut from Xavi’s cloth; cool kids who aren’t afraid to socialize with newcomers, crack a joke, and join us for drinks outside on a sweltering summer night. This workplace culture sounds like a minor note, but it’s straddling a fine line that its peers have struggled to master: most restaurants I’d compare Polemico too are oftentimes too elegant for my friends, and those that are equally cool are a little too chaotic for my parents.
If you still don’t know what I’m saying, one bite of their seaweed rice with sea bream served by their charismatic waitstaff will clear up any confusion.
