There is only one restaurant in the entirety of Lisbon that has the guts to completely alter its cuisine every four months, using Portuguese ingredients to discover entirely new kitchens.

That restaurant is Vibe by Mattia Stanchieri, a cavernous lair that explores the history of a different country (or region) with the same studious research and hard-working dedication as a Rhodes scholar. This isn’t yet another fancy restaurant with a knockout menu, it’s an experience that quite literally begs to be re-visited time and time again because it operates with the same blink-and-you-missed-it informality as a food festival pop-up.

The irony, of course, is that Vibe is a categorically high-end restaurant, de-constructing classic dishes and plating them on custom-made porcelain. It’s all done with a playful sense of humor so you never feel like you’re choking on culinary pretentiousness: Fine dining that’s been turned into fun dining.
